SugarMoo’s Red Velvet Brownies
Yields 16 servings
Ingredients
1 (115g or 4oz) bittersweet chocolate baking bar, chopped
3/4 cup butter
2 cups sugar
4 large eggs
1 and 1/2 cups all-purpose flour
1 (30ml or 1oz) bottle red liquid food colouring
1 and 1/2 tsp baking powder
1 tsp vanilla extract
1/8 tsp salt
1/4 cup to 1/2 cup peanut butter
Store-bought gingerbread, crumbled
Method
Preheat oven to 180°C. Line bottom and sides of a 23cm (9-inch) square pan with aluminium foil, allowing 5cm to 7cm to extend over sides. Lightly grease the foil.
Microwave chocolate and butter in a large microwave-safe bowl at high for one to two minutes or until melted and smooth, stirring at 30-second intervals. Whisk in sugar. Add eggs, one at a time, whisking just until blended after each egg. Gently stir in flour, food colouring, baking powder, vanilla extract and salt. Pour mixture into prepared pan.
Bake at 180°C for 44 to 48 minutes or until a wooden pick inserted in the centre comes out with a few moist crumbs. Cool completely on a wire rack (about 2 hours). Once cool, lift brownies from pan, using foil sides as handles; gently remove foil. Spread a thin layer of peanut butter over the brownies; then sprinkle the crumbled gingerbread across the top. Cut into 16 squares and devour.
