Tabat tamer (Date balls)
Serves: 6
Preparation time: 20 to 25 minutes
Ingredients
• 200g soaked walnuts
• 4tbsp 100 per cent cocoa powder
• 20 to 25 medium-sized medjool dates
• 1tsp vanilla extract
• 1tbsp orange blossom
• Coconut flakes for decoration
Method
• Soak the walnuts overnight, or for a few hours, then drain the water and lay them out to dry on a paper towel.
• In a food processor, process all the ingredients into powder except the dates. Add the dates little by little until combined.
• Roll the mixture into small balls.
• Roll the balls over the coconut flakes (optional).
Kousa bi banadoura (zucchini and tomato in olive oil)
Serves: 6
Preparation time: 15 to 20 minutes
Ingredients
• 1kg zucchini
• 750g tomato
• 1 medium-sized onion
• Salt and pepper to taste
• Olive oil as needed
• Parsley or mint leaves
Method
• Cut the zucchini into squares.
• Peel the tomatoes and cut into squares. The tomatoes can be boiled first to make them easier to peel.
• Chop the onion finely into small pieces and sauté in olive oil until golden.
• Add the tomatoes and the zucchini, and stir over medium heat.
• Cover lid and cook for 20 minutes or until tender.
• Add salt and pepper to taste.
• Garnish with parsley or mint leaves.
• Serve with pitta bread.
