The two Michelin-starred chef Oliver Glowig has come to Dubai to launch a month-long promotion featuring a special tasting menu.
For three days beginning today, BiCE Mare at Souk Al Bahar will host Glowig as he serves up traditional Italian dishes with a modern twist. His menu will be available until November 14, with dishes prepared by BiCE Mare’s head chef, Francesco Guarracino.
Glowig is from Germany, but has been living in Italy for 13 years. In 2011, he opened his eponymous restaurant in Rome and earned two Michelin stars just eight months after its opening.
Of his cooking style, Glowig says: “My kitchen does not falsify the products. I try to combine three products, never more. For me, it is important that the customer can still understand what he is eating.” He says he is excited to cook for the UAE’s food-lovers. “Dubai is very interesting,” says Glowig,.“There is a great market for Italian cuisine.”
Glowig’s degustation menu will feature some of his signature dishes. For starters, he’ll offer slow-cooked artichoke hearts filled with burrata cheese as well as aubergine Parmigiana with smoked provola cheese. Also on the menu is a risotto made with 48-month aged Parmigiano-Reggiano and parsley cream, with white Alba truffles.
The menu includes two options for mains, one of which is quail breast served with dry fruits, foie gras and white-onion cream. The signature dessert is Glowig’s cannoli, made with caramelised hazelnuts and almonds and Amalfi lemon zest.
