DUBAI // New standards on how food outlets prepare and sell shawarma will be imposed by Dubai Municipality.
The authority has devised a guide for the 472 shawarma sellers in the emirate.
Sultan Taher, head of the food inspection division, said the guide explains the new health standards for the design and distribution of equipment needed to prepare shawarmas.
“We noticed that a large number of restaurants and cafeterias in Dubai were offering shawarma, and some were careless with the preparation aspect of it,” he said. “Inspectors noticed that food was prepared in tight spaces, below the recommended space, and large quantities were offered to customers, which could lead to violations and health hazards.”
Mr Taher also said that shawarma included several ingredients, including meat, vegetables and sauces, all of which need special storage conditions. “Some were stored in unhealthy conditions, at high temperatures, which leads to bacteria,” he added.
