The Mango Tree in Dubai’s Souk Al Bahar has created a new spring menu for health-conscious diners. The restaurant’s head chef, Peter Tseng and clinical dietician, Anna Pettit teamed up to develop a series of dishes using natural ingredients and healthier cooking techniques like woking and grilling to reduce calories. Guilt-free starters include Yum Hua Plea – a banana blossom, mint and coconut salad with a chili dressing and Po Pia Sod Thai – spring rolls packed with an Asian salad of sunflower sprouts and tofu croutons. A new signature main is Pla Yang Hor Bai Kluay Samunprai, otherwise known as the catch-of-the-day, steamed with Thai seasoning in banana leaves.
