Simone Bonini, one of Italy’s most famous gelato makers, showed a select group of guests the trick of his trade at the weekend. In a special masterclass at the Il Borro Tuscan Bistro Dubai, an Italian restaurant inside the newly opened the Jumeirah Al Naseem Hotel, Bonini whipped up the freshest ice-cream right in front of his audience’s eyes. He made the delicious dessert in fig, kiwi and mozzarella cheese flavours. Yes, you read that right, mozzarella ice cream! It was surprisingly delicious tasting, very creamy and not too sweet. “My philosophy is to keep everything as fresh as possible,” says Bonini. “Real gelato is made from fresh milk, cream and eggs and that is what makes it taste so good.” As part of his guest appearance at the hotel he created a bespoke four-course menu for hotel guests which included Caprese salad with the mozzarella gelato and then a presentation of three more variants on his gelato, the classic Italian dessert. <em>For reservations at Il Borro, call 04 275 2555 or email reservations@ilborrotuscanbistro.ae.
