This Saturday (September 24) heralds the arrival of two Michelin star chef Nathan Outlaw at Dubai’s Burj Al Arab hotel. Outlaw has taken the reins at Al Mahara restaurant and will run the kitchen — alongside head chef Pete Biggs — until October 3.

He will then return to the United Kingdom and commute regularly to the UAE to oversee proceedings and source seasonal produce from the region for his menus.

The restaurant is open for lunch from 12:30pm to 3pm and dinner from 7pm to 11:30pm. The set menu is priced at Dh450 for a three-course lunch and Dh650 for a four-course dinner.

Best known for his fine fare and ingredients of the best provenance, signature dishes created for Al Mahara by Outlaw include a lobster risotto, crispy oysters with caviar and sticky toffee pudding.

“My style of cooking is one of simplicity but with complex flavour combinations, using top quality local, seasonal, responsibly sourced ingredients,” says Outlaw. “This is what people can expect from the menu. I want the seafood to shine and the taste to make the impact. I like to hook it and cook it, simple and uncomplicated.”
