On the menu: panucho yucateco (Dh40) — a corn tortilla with black bean purée, pulled chicken pibil (slow-roasted), grated cheese, motul salsa and pickled onion; pescado tikin xic (Dh80) — achiote-marinated sea bass with chilli poblano rajas, roasted corn, grilled tomato, plantain purée and salsa xni pec (this is one hot salsa); and, for dessert, you’ll get dulce de papaya (Dh30) with caramelised papaya, cinnamon ice cream, cottage cheese and whipped cream. Each region’s menu will be served for one month. Mexico City will be featured in March. For reservations, call 02 656 2000.
