Mobile food vendors are nothing new. In fact, they have been around for probably as long as cities themselves. But bespoke food trucks are something of a novelty in this country, and they are offering entrepreneurial food lovers a great opportunity to share their passion. As The National reported yesterday, 12 food trucks will soon hit the streets, with many more to follow.
The advantages are many. With lower initial investment and operating costs, starting a rolling restaurant is cheaper and faster than opening a bricks-and-mortar establishment. It’s also easier, because the system allows operators to skip many of the licensing requirements.
Food trucks also offer the owners the flexibility to innovate in terms of menu and where they set up shop on any given day. And by drawing a large number of customers, these businesses will help create a vibrant street-food culture. There are a lot of different ways to revitalise our neighbourhoods, but few are this delicious.
