New Spanish chef at Catalan Abu Dhabi spruces up menu

If you want an authentic taste of Spain, then who better to serve it up than a Spanish chef with years of experience at restaurants with three Michelin star restaurants.

Rosewood Abu Dhabi has appointed chef Francisco Sanabria as the Chef De Cuisine of Catalan, which reopened last month. The chef, with 14 years of experience at some of Spain’s popular restaurants will be sprucing up the menu with signature dishes inspired by Barcelona’s culinary traditions.

The new menu includes such starters as Carabinero tartare and roasted steak of foie gras, with mains including oven-roasted sea bass and traditional Catalan lobster and vegetable fideua. The chef’s in-demand Berry Melody with strawberry and rose cream ice cream, mascarpone mousse and lemon blueberry soup will follow the three-course meal.

Sanabria began his career at Akelara in San Sebastian, a three Michelin star restaurant and went on to join Sant Pau in Barcelona as Chef de cuisine. He served as a consultant chef when Sant Pau opened up in Tokyo– which received two Michelin stars. The chef has been part of the two-starred restaurant Moments in Mandarin Oriental, Barcelona and Bar Canete as well.
