You might not want to tackle too many of the delicious dishes at the Bull & Roo restaurant Muchachas, in the Holiday Inn Express Safa Park. Best leave succulent pulled beef sopes, charcoal grilled pulpo and twice-cooked veal adobo to the experts. But this more-ish guacamole? Now that’s doable:
Ingredients
• 300 grams avocado
• 20g coriander, chopped
• 10ml lime juice
• 3g black salt
• 1g pepper
• 10g pickled jalapenos
• 1 lime wedge
• 15pc corn tortilla chips
Method
Open the avocado and remove the seed, scoop out the flesh with a spoon into a clean bowl and smash.
Add the coriander, and season with salt, pepper and the lime juice.
Serve in a bowl and garnish with the jalapenos and the lime wedge on top. Enjoy with a bowl of crispy tortilla chips.
