Below is one of her favourite recipes: Goan prawn curry



Goan Prawn Curry

1 cup prawns (deveined)
1 big onion, finely sliced
4 green chilies, sliced lengthways
3 tablespoons lemon juice
1 tablespoon grated ginger
1 table spoon garlic paste
1 tablespoon coriander powder
1/2 tablespoon cumin powder
1 tablespoon black pepper  
11/2 tablespoon chili powder
1 tablespoon tamarind pulp
1/2 tablespoon turmeric
1 cup coconut milk
10-12 curry leaves
2 tablespoons of frying oil  
Salt as per taste

Add sliced onion, green chilies, turmeric, pinch of salt and lemon juice on prawns. Mix well and refrigerate for an hour.
Take a deep pan, heat oil and add curry leaves.
In a separate bowl, make a paste with the spices - ginger, garlic, cumin, pepper, chili powder and coriander. Add this to pan and sauté well.
Add the marinated prawns, fry well for a minute. Add the coconut milk and bring it to boil.
Add desired salt and tamarind pulp, stir well. Boil again for a few minutes. Make sure the prawns does not become hard.
Serve hot with rice.
