Ingredients
8 fresh mint leaves
5 lime wedges
15ml vanilla syrup
150ml apple juice
30ml soda water
Preparation
Muddle fresh mint leaves, lime wedges, vanilla syrup and a drop of Soda water in a highball glass.
Top with apple juice.
Fill 3/4 with ice cubes and the rest with crushed ice.
Top with Soda water.
Garnish with a mint sprig and apple slice.

Ingredients
2 tsp lemon juice
3 tsp sugar syrup
Fresh mint leaves
crushed ice
Soda water
Preparation
Mix ingredients in a high ball glass. Garnish with lemon and mint.

Ingredients
60ml sour orange base (12ml each of lime juice, lemon juice, orange juice, simple syrup and elderflower syrup)
6 halved kumquats
6 to 8 mint leaves
Soda water
Preparation
Muddle all ingredients and pour into highball glass.
Fill with ice and top with soda water.
Squeeze lime, then drop lime into glass. Stir gently.
