SAADIYAT DELIGHT (A mix of green tea, rose and jasmine)

Mixologist: Vincenzo Gazzili

Venue: St Regis Saadiyat Island Resort, Abu Dhabi

Ingredients

•3 to 4cm celery branch

•25ml apple juice

•25ml cranberry juice

•75ml jasmine tea

•10ml simple syrup

•2 tsp rosewater

•1 tsp egg white

•2ml grenadine syrup

•Juice of half a lime

Preparation

1 Muddle the celery branch gently in the shaker.

2 Mix all ingredients.

3 Fill the shaker with ice and shake vigorously for 10 seconds.

4 Double strain in a chilled martini glass.

5 Garnish with red currant and white plumeria.

NATIONAL TREASURE (Passion fruit, basil, lychee and pineapple)

Venue: Almaz by MOMO, Galleria Mall, Abu Dhabi

Ingredients

•150ml passion fruit juice

•100ml pineapple juice

•6 basil leaves

•2 pieces of fresh passion fruit

•10ml lychee purée

•10ml passion fruit syrup

•10ml grenadine syrup

Preparation

1 Muddle the basil leaves.

2 Add the rest of the ingredients.

3 Add ice and shake.

4 Serve in a highball glass and garnish with pineapple leaf, basil leaf and one piece of passion fruit.

SPARKLING RASPBERRY BASIL LEMONADE (Fresh raspberries and lemon juice, topped with sparkling water)

Venue: Market Kitchen, Le Royal Méridien, Abu Dhabi

Ingredients

•3 raspberries

•3 basil leaves

•20ml lemon juice

•30ml simple syrup

•Sparkling water

Preparation

1 Muddle raspberries with basil.

2 Add lemon juice and simple syrup.

3 Add ice and shake well.

4 Top with sparkling water and serve in a highball glass.
