"Native to Mexico, avocados are a central ingredient in our cooking and I grew up eating them almost every day. My mother used to make them many ways, adding them to soups or tacos to give a creamy edge to a dish, but my favourite has always been guacamole. Literally meaning avocado sauce in Aztec, it is a celebration of the amazing colour and flavour of the mighty avocado, and a signature dish at Loca."
Loca's signature guacamole (serves 2)
Preparation time time: 5 mins
Ingredients
1 ½ avocadoes (large)
Juice from ½ lime
1 tablespoon chopped coriander
2 tablespoons diced tomato
20g chopped jalapenos
A pinch of garlic powder
1 tablespoon diced shallots
Salt and pepper to taste
Method
Scoop out the avocado flesh and place in a small molcajete or mixing bowl.
Squeeze fresh lime into the bowl.
Add the coriander, tomato, jalapenos, garlic powder and shallots into the bowl and pulp mixture into desired consistency.
Serve immediately with salsa and tortilla chips.
