Healthy Ramadan recipes to try at home

To decrease your risk of an ER visit, try these healthy Ramadan recipes from the Right Bite Nutrition Centre. Your stomach will thank you for it.

Meat biryani

Ingredients (for one serving)

60g basmati rice

120ml vegetable stock

2g turmeric powder

2g cinnamon powder

90g beef, cut into cubes

2ml olive oil

1g ginger, chopped

2g garlic, chopped

10g onions, chopped

65g tomatoes, chopped

2g salt

Ingredients for garnish

20g onion slices, grilled

4g almonds, roasted and chopped

5g raisins

8g dried apricot

15g coriander leaves, chopped

Method

Wash and soak the rice for two hours.

In a pot, bring the vegetable stock to boil. Add cinnamon powder and turmeric. When rice is cooked, drain and set aside.

In a separate pot, sauté the beef in olive oil, onions, garlic and ginger. Add the tomatoes and all the spices. Season with salt.

To serve

Place the beef on top of the rice. Garnish with grilled onions, almonds, raisins, dried apricot and coriander leaves.

Chicken moghrabieh

Ingredients (for one serving)

120g chicken breast, cut into cubes

95g moghrabieh

40g shallots, chopped

12g chickpeas

5g caraway powder

3g flour

2g olive oil

2g salt

2g cinnamon powder

300ml water

Method

Boil the chicken in water with half of the salt, pepper, cinnamon and caraway powder. Set the stock and chicken pieces aside, separately.

Boil the moghrabieh with half of the chicken stock and the remaining spices. Boil until stock is well absorbed by the moghrabieh.

Take the moghrabieh out of the heat and add the chickpeas. Set aside.

For the sauce

Boil the remaining chicken stock. Add flour, while stirring continuously. Adjust the taste by adding caraway and cinnamon powder.

For the garnish

Grill the chopped shallots.

To serve

Arrange the chicken pieces on top of the moghrabieh. Garnish with grilled shallots. Serve hot.
