Chefs around the world, put on your aprons. The S. Pellegrino Young Chef award is back for the second year and applications are being accepted from candidates aged 30 and below, who have at least a year’s experience in a restaurant as a chef, sous chef or chef de partie.

The international competition is divided into two phases. During the first, applications will be divided into 20 groups based on geographical region, and 10 semi-finalists from each will be chosen to compete at a local event.

In the second phase, a winner will be selected from each of the 20 groups. Their dishes will be judged based on the following criteria – ingredients, skills, genius, beauty and message.

The 20 finalists will then compete in a grand finale in Milan on October 13, at which the grand winner will be crowned.

In the first edition of the competition last year, the award went to Mark Moriarty, representing UK-Ireland.

Two chefs from the UAE made it to the semi-final last year, where they competed at the local level. The winning finalist for the Africa and Middle East region, Angelo Scirocco, was from Cape Town.

To enter, fill out the application on www.finedininglovers.com and upload an image of your signature dish. Deadline for submissions is March 31
