A meal for two that costs less than Dh30, ready in no more than 30 minutes. This week: Mushroom tart.
Fresh ingredients
1 bulb garlic
1 onion
250g mushrooms (I used button)
1 small bunch parsley
1 lemon

Method
Put a baking sheet in the oven and heat to 220C/200C/gas 7. Peel and thinly slice two garlic cloves and the onion. Pick and finely chop the parsley leaves.
Roll the pastry out into a square approximately 25cm long and 25cm wide and place on a large sheet of parchment paper. Cut the remaining pastry into 2cm wide strips and place around the edges of the square, to build a border.
Slide the parchment and pastry onto the preheated baking tray and cook for 10 to 12 minutes.
Heat a tablespoon of oil and a small knob of butter in a frying pan over a medium heat. Add the onion, garlic and mushrooms, season with salt and black pepper and fry for 8 minutes, until tender.
Increase the heat slightly and add a splash of white vinegar. Allow to bubble away, then decrease the heat again and stir in the cream, parsley and a tablespoon of lemon juice. Heat through briefly then remove the pan from the heat.
Remove the baking sheet from the oven and spoon the mushroom mixture into the prepared pastry cased in an even layer. Return to the oven and cook for 8 to 10 more minutes, until the pastry is golden.
Note: The Dh30 recipe works on the premise that you already have basic store cupboard or fridge staples - items such as oil for cooking and dressing, vinegar, butter, salt and pepper - at your disposal.
