Another bread recipe, this time a gluten-free version courtesy of the Holiday Inn Abu Dhabi. If you're following a gluten-free diet and planning to eat at the hotel, it's worth noting that provided you give them at least four hours notice, they will whip up a loaf of this bread for you. <b>Gluten free bread</b> Makes: 2 loaves 450g gluten-free bread flour 2g salt 10g quick yeast 30g sugar 325ml warm milk 5ml white vinegar 2 eggs 90ml oil Mix the flour, salt, yeast and sugar together. In a large bowl, beat the milk, vinegar and eggs together until well combined. Add the dry ingredients to the bowl, mixing to form a sticky dough. Continue to mix, gradually adding and incorporating the oil. Divide the dough between two lightly oiled 500g bread tins. Cover with a clean tea towel and leave to rest for at least an hour. Preheat the oven to 180C and bake the loaves for 40 minutes. Turn out onto a rack and leave to cool for 20 minutes before slicing.
