Zaytoun in Dubai has a new head chef at the helm, who's intent on bringing in some sweeping changes. The international restaurant at Crowne Plaza Dubai Festival City has undergone a revamp, with a refurbishment of its interior and a new menu concept. Overseeing these changes is the new head chef, Francesco Bucca, who says the eatery will now focus on healthy Mediterranean cuisine. "With a region as diverse as the Mediterranean, you can be really playful when creating a menu, combining not only flavours and textures, but also the varying cooking styles from any of the 20 countries that share its coast," says Bucca, who hails from Sicily. "I have changed the whole menu, so everything is new. Our guests can walk in and feel like they’re actually in the Mediterranean”, he added.
