Recipe: watermelon and halloumi salad

Desperate for ways to beat the lingering heat? Try this easy watermelon and halloumi salad from the culinary team at Kris Kros in Downtown Dubai.

Ingredients

8 cups seedless watermelon, cut into bite-sized cubes

225g halloumi cheese, cut into bite-sized cubes (grilled if preferred)

1/4 cup fresh mint leaves, chopped

3 Tbsp freshly squeezed lemon juice

Pinch of salt

Method

Toss all ingredients together in a large mixing bowl. Serve chilled.
